I’ve been on a serious cookie binge lately. Like batches, upon batches, upon batches. I’ll wander into my kitchen, not knowing what I want to make, and before I know it, I’m making cookies. This time, it lead me to these lemon poppy seed cookies.
What I love most about cookies is the variety. There’s an endless number of tweaks, additions, substitutes, and swaps you can make and still come out with a glorious cookie. Any allergy you have, there is sure to be a cookie recipe for you out there.
They’re that special.
And these lemon poppy seed cookies are sensational. They’re filled with bright citrus flavors and remind me of spring. They’re soft and chewy, without being dense, and because they’re filled with nutritious ingredients, they’re completely guilt-free (and gluten-free of course!).
